This Chardonnay comes from a single vineyard situated on Crystallum’s Shaw’s Mountain Vineyard in the mystical and misty Hemel-en-Aarde region near Hermanus.Â
Whole bunches are pressed with no enzymes or sulphur added. After an overnight rough settling, the juice is sent to barrel, where spontaneous fermentation and ageing unfold over 10 months in 300- and 500-litre barrels, 20% of which are new. The result is a focused, site-driven Chardonnay that balances tension, texture, and finesse with ease.
